Ingredients:
- For the Casserole:
- 1 lb frozen hashbrowns (thawed if needed)
- 2 tbsp butter (melted)
- 1 cup shredded sharp cheddar cheese
- 1 cup diced cooked ham
- 1/2 cup diced green bell pepper
- 1/2 cup diced red bell pepper
- 1/2 cup diced onion
- 1/2 cup diced mushrooms (optional)
- 6 large eggs
- 1/2 cup whole milk
- Salt and pepper, to taste
- 1 tsp garlic powder (optional)
- 1 tsp onion powder (optional)
- 1/4 tsp paprika (optional)
- For Garnish (optional):
- Chopped fresh parsley or green onions
- Extra shredded cheese for topping
Instructions:
- Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- Prepare the hashbrowns: In a large bowl, combine the thawed hashbrowns with the melted butter. Spread the hashbrowns evenly at the bottom of the prepared baking dish.
- Layer the fillings: Top the hashbrowns with the shredded cheddar cheese, diced ham, green bell pepper, red bell pepper, onion, and mushrooms (if using). Give everything a quick toss to evenly distribute the ingredients.
- Make the egg mixture: In a medium bowl, whisk together the eggs, milk, salt, pepper, garlic powder, onion powder, and paprika. Pour the egg mixture over the layers in the casserole dish, making sure it evenly coats everything.
- Bake the casserole: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the eggs are set and the casserole is lightly golden on top.
- Serve and garnish: Remove the casserole from the oven and let it rest for 5 minutes before slicing. Garnish with freshly chopped parsley or green onions and an extra sprinkle of cheese if desired.
- Enjoy!: Serve hot and enjoy a delicious, comforting breakfast or brunch dish that the whole family will love.
Tips:
- You can make this casserole ahead of time! Assemble everything the night before, then cover and refrigerate. In the morning, simply bake it as directed.
- Feel free to swap the ham for bacon, sausage, or even add extra veggies for a meatless version.
- For extra flavor, try adding a pinch of chili flakes or hot sauce to the egg mixture for a spicy kick.
